Base Salary of £30,000 - £34,000 + £5,000k Tronc Average + Bonus … OTE of £42,000+
Badger and Co has been established on Castle Street in the heart of the new town, mainly serving Badgers Burrow of cocktails and small plates inspired by being the home of Author Kenneth Grahame who wrote Wind in the Willows.
2024 is time for Badger to open a new chapter and follow the path of being a food led concept and allowing the restaurant to take centre stage. The aspiration here is to be a Rossette Standard Restaurant. This development is in its infancy and requires Sous who can help bring our ideas to life along with our in post Head Chef.
Concepts could include tasting menus as well as showcasing fabulous wines. Badger and Co is a 42 cover restaurant with a private dining area as well as courtyard that welcomes a mixture of locals, tourists and corporate groups.
We are looking to appoint a creative and driven chef, who can help create a new menu and lead/train their brigade to AA Rossette standards.
Duties
- Manage and oversee the entire kitchen operation in absence of Head Chef
- Deliver superior guest experiences
- Develop and Deliver overall kitchen strategy
- Entrepreneurial drive with a clear understanding of the current market
- Implement innovative strategies to improve productivity and sales
- Control costs and minimise waste
- Monitor operations and initiate corrective actions
Required Skills
- Two years minimum of experience as Sous Chef
- Extensive food knowledge
- Strong leadership, motivational and people skills
- Critical thinker and problem solver
- Good Financial management skills
