Badger and Co, Head Chef
Base Salary of £38,000 + £5,000k Tronc Average + Up to 40% of Salary Bonus
Badger and Co is recruiting a Head Chef for their stylish new concept serving all fresh food based in the heart of the New Town in Edinburgh. This is an opportunity for an existing Head Chef or ambitious Sous to take the next step in their career.
As the Head Chef you will be running the kitchen while producing menus and dishes to aim for 2 Rosettes and be a real destination for foodies. This is a real opportunity to be creative while being supported by the executive chef and central support team to achieve your goals. The ideal candidate will have experience running kitchens in 2 rosette and want to push for more accolades along the journey.
Duties
- Working closely with the Restaurant General Manager and Front of House Team
- Producing Fresh Cooked Food using seasonal products to AA rosette levels
- Manage, Coach, Train and develop the brigade and achieve GP targets
- Implement new menu ideas and keep focused on customer trends
- Good Communicator & People person
- Experience of Fresh Food volume driven fresh kitchen
- Maintaining excellent standards of hygiene and cleaning schedules
Required Skills
- Three years minimum of Senior Sous/Head Chef experience, at Rossette level.
- Extensive food knowledge
- Strong leadership, motivational and people skills
- Critical thinker and problem solver
- Good Financial management skills
