Head Chef
Signature Group are looking to hire a Head Chef to join us for our Edinburgh venues.
Paying a salary of £36,000 - £38,000 plus TRONC based on a 45hr Contract.
As Head Chef you will support the day to day running of the kitchen, also inspire and motivate by setting an example of high standards and pace whilst communicating a vision of success which the whole team aspire to follow.
Standards and Stock Control
· Promote a positive perception of the company at all times both internally & externally
· Adhere to Food Hygiene procedures as laid out in unit HACCP folder. Ensuring the following paperwork and policies are implemented, completed, stored safely
· Ensure that the storage of food meets company and statutory health and safety requirements
· Prepare food for service appropriate to sales levels
· Ensures readiness for service and the pace is set for peak trade
· Deal with any customer returned food in a timely manner
· Orders food stock appropriate to sales levels
· Only use nominated suppliers and petty cash purchases in emergency situations only
· Ensure that deliveries are checked and signed
· All sub-standard food is returned with the appropriate paperwork and the supplier contacted. Supplier issues to be reported to exec chef & area chef
· Ensure all invoices are processed daily and accounted for
· Ensure the security of all stock
· Controls wastage and records all wastage
· Staff Food policy is followed with no unauthorised food leaving the kitchen
· Attend company meetings as requested
· Report any health & Safety concerns, incidents and accidents to the General Manager
Personnel Skills
· The ability to adapt to various cuisine styles across the estates kitchens
· Help train new and existing kitchen staff on the preparation, arrangement and plating of dishes per the current menu
· The ability to direct and be directed
· Assisting the chefs on duty with, training and development of staff, service
· Cross-train kitchen staff on multiple stations when possible
